Warm Chicken & Prosciutto Salad



2 chicken breasts, bone in and skin on
Olive oil
Salt & pepper to taste
1 tablespoon dried rosemary leaves, finely chopped
8 slices of prosciutto
1 bag baby spinach leaves, washed and dried
1 corella pear, very thinly sliced
100 grams candied walnuts

Blue Cheese Dressing

100 grams blue cheese, crumbled
½ cup crème fraiche
½ cup whole egg mayonnaise
2 tablespoons finely chopped chives
1 tablespoon white wine vinegar
Salt & pepper to taste
