White Chocolate Panna Cotta

3 teaspoons powdered gelatine
¼ cup milk
1 litre pouring cream
½ cup white caster sugar
1 teaspoon vanilla bean paste
150g white chocolate, chopped

Balsamic Mint Strawberries

1 punnet strawberries, washed and dried
2 tablespoons good quality balsamic vinegar
1 tablespoon icing sugar
12 mint leaves, julienned
Extra mint sprigs to garnish
